Fruits and Vegetables-9 servings/day???

    I'm trying hard to watch my diet and keep eating healthy. I wonder how all of you manage to eat 9 servings a day of fruits and veggies? I have fruit with my granola or oatmeal in the am, salad and sandwich at lunch and veggies with dinner. Any suggestions?? Thanks.

    Not that I do this every day but here is ideally what I would do -

    Breakfast: 

    Greek Organic Yogurt with some fruit (banana or necterine)

    Snack:

    Piece of fruit (apple or grapes)

    Lunch:

    Large salad (usually at least 2 servings of vegetables)

    Snack:

    Fruit or

    carrots and hummus

    or

    tomatoes with ranch

    Dinner:

    Salad (again 2 or more servings of vegs)

    Dessert -

    Dole fruit pop

    That is 8 servings IF the salads were only two servings of vegs

    Everyminute- Thanks so much for the suggestions. With the salad servings...is a serving a half cup? I like salad but tend to get tired of it too. Of course I work at a hospital where coworkers go to the cafeteria and load up on cheeseburgers, patty melts and fries! I try to bring my own lunch to avoid the cafeteria temptation. Working 12 hour shifts can make it hard. Thanks again for the good suggestions though!

    Smoothies help me get my fruits. I mix them with low or non-fat vanilla yogurt, orange juice or another juice. Add a banana, strawberries, blueberries, peaches, etc. Add ice and mix in a blender. My husband is diabetic so I try to keep carbs out of our dinner. I steam broccoli, cauliflower and carrots together. We usually have two or three vegetables at dinner and/or a salad. Slicing up tomatoes and cucumbers or having a vegetable platter in the fridge is a great snack to have on hand. Low fat cottage cheese with salsa makes a great veggie dip.

    I estimate each serving to be about a cup but it depends on how dense it is.  I try to put a lot of different veggies in my salad so I dont get bored.  Try going to a farmers market and get some new veggies or prepare veggies in a differnt way (grilled, steamed, even on pizza!)

    Actual serving sizes of veggies tend to be about 1/2 cup which is next to nothing. I tend to eat about 2 cups of non-starchy veggies for lunch most days - there's 4 servings right there.

    Highly recommend Deborah Madison's "Vegetarian Cooking for Everyone". It's a great way to figure out what to do with veggies you've never used before and don't really know how to cook, make interesting.

    I pretty much only eat fruit in season so right now I'm going nuts on strawberries! Love them in my greek yogurt (tons of protein, really pretty cheap in calories, no fat, creamy, rich, yum! - had it for dinner tonight). Anxiously awaiting the raspberries ripening. During chemo I dug a huge trench (about 24 x 3 feet, about 2 feet deep) and filled it with composted manure and it's our second raspberry patch. It is going to burst this year and I can't wait!!!

    Jorf--it's so funny because when I was on chemo I prepared and planted raspberry bushes too! WHat a funny coincidence! :)

    I try to get in 9 servings but it can be hard some days!

    My favorite breakfasts are:

    plain homemade yogurt with blueberries or peaches, agave nectar and walnuts or flax seed

    reverse omelette--a heaping cup of sauteed mushrooms and spinach, topped with an egg

    oatmeal or whole grian pancakes with blueberries or a fruit compote made with strawberries, rhubarb and blueberries

    Smoothie made with fruit and *raw spinach*(blueberries cover the color!)

    If I don't get in enough fruit or veg servings at breakfast, I might run short for the day. Or if we have a take out dinner.

    I do try to eat a bunch of greens every day--I've been concentrating on kale, collard, swiss chard and mustard greens. I would love to love dandelion but admit to having trouble appreciating it. I'd love suggestions regarding them.

    Now, my question relating to this, I try to eat at least one serving or more of beans and nuts a day--do you all count these towards your quota?
