A good quality extra virgin olive oil and canola oil I think are "the best". . Olive Oil does have a more pungent flavor but I myself..don't taste olives...but I wish it did!! I love olives! ..lol. I use it in pasta sauces, salad dressings, marinades and roasting vegtables mainly.

Canola oil is good for baking like cookies , pancakes..ect. I use sesame oil for asian dishes but it has a stronger flavor than olive oil.

The notion that all vegetable oils are healthy is, at the very least, doubtful. In fact, only a few vegetable oils are healthy: coconut, palm, olive, and possibly a couple of others.

As to canola oil, according to Mary Enig, Ph.D., an authority on oils and health, it starts out fine, but the processing it undergoes until it reaches the store shelves damages it beyond repair:

..."most of the omega-3s in canola oil are transformed into trans fats during the deodorization process"...

Would there be a value in using an olive oil this isn't extra virgin, and thus having less aroma?  I know its a tradeoff, but I pose this question to someone who might know.  There's that guy Udo Erasmus, selling books and his oil, and he recommends a blend rather than a single oil.  Might be some merit in that approach.

So then what is an oil that doesnt have a strong flavor? Ideal for baking ect if canola oil is a no no.

I don't use canola oil often, but when I do I would think it was ok.

Refined coconut oil has no flavor. It is great for baking. The only drawback is that it is expensive.
