Carrot-Ginger-Orange Soup

For anyone wanting to add more veggies to your diet, this is a super soup!

1.  Dice one medium potato, one onion and 3 large carrots.

2.  Saute them lightly in olive oil.

3.  grate about 2 tbsp fresh ginger and add to the above

4.  Add 2 cups of low-sodium chicken broth to the above

5.  Add one orange (zest, juice and pulp)

6.  Simmer slowly for about 1/2 hour

7.  Pour into a blender and "blend", and add salt and pepper to taste.

8.  Reheat and serve

9.  Follow it with a true Greek salad (feta, tomatoes, onions and cucumbers with oil and vinegar dressing) and enjoy!

    sounds yummy, will try it, have been looking for soups.

    Now here's my new favourite salad:

                       -baby spinach

                       -sliced strawberries

                       -thinly sliced cucumber

                       -thinly shaved raw brussels sprouts (they are pretty, and crunchy and have I3Cs)

                       - toasted whole almonds, chopped, on top

    I just make a simple vinaigrette using olive oil, white balsamic vinegar, & dijon mustard, s & p

    Yum! I have the ingredients to make carrot soup and was going to make it today--I will have to try adding the orange. Sounds delish--Thanks!

    I made it for dinner tonight.  Tomorrow I'm going to try Souad's salad.  never thought of using raw brussels sprouts; I bet they taste a whole lot better than cooked!

    By the way, the soup recipe makes about 3 servings, so just add more carrots and broth to make more.
