Yummy Festive Salad

I tried this salad last weekend at a Family Get together.

It was delicious!  And So Pretty

I will be bringing it to my Dads on Xmas Eve.

If anyone has made this before...Is it ok to make & Mix the dressing in the day before?

Dressing:

Mix together:    4 T. sugar; 1/2 t. salt; 1 T. poppy seeds

Then add:
1/2 c. oil
4 T. raspberry wine vinegar
1/2 t. almond extract

Salad:

1 c. dried cranberries; 1 bag spinach (I used two for the amount of dressing)

1 c. slivered almonds; 3 T. sugar (cook over low heat until carmelized)

    You can make the dressing the day before and refrigerate. Keep the sugared almonds separate - they can also be done ahead of time. Mix dressing in with everything just before serving...otherwise the spinach gets goopy (and can start to get black around the edges) and the almonds will lose their crunchy outsides.

    You're welcome.

     I made my Caramelized Almonds yesterday...They really didnt caramelize well.  I followed the directions- which wasnt much.

    The ones in the salad I tried were very good & sweet!

    Deja Helped herself to a Mouthful when they were cooling.  And she thought they tasted fine (good thing I made a little extra)

    Can't help you there...I have a tendency to burn, rather than toast almonds, so carmelizing would probably not turn out well. My sister, who makes a salad similar to this, gave me the insight.

    Totally off-topic, but I wonder how many Pams we have on this site....and if your middle name is Susan, you get bonus points  Wink

    Mine dont look burnt - but  I thought they tasted a little burnt.

    There does seem to be alot of Pams here...Wonder if we should start a Pam Thread.  LOL
